This week I got to visit Kolomo, Peru, New Palestine, Warsaw and many other exotic cities. And yet, I never left the US. This was all in Indiana. Such a beautiful state, especially this time of year.

This restaurant is divine!!! You know when you go to a restaurant and they need to change so many ingredients in a dish due to your allergies, that it comes out very bland? This is the complete opposite!!! I gave them my Allergy Chef card and they returned an exquisite meal. So tasty and flavorful. I wish mores restaurants would follow suit!

With my hectic travel schedule becoming dormant, I am spending a lot of time in the kitchen.

I found this recipe in one of @jamieoliver `s cookbooks. Of course I had to edit it based on my food allergies. Thank you Jamie for the inspiration!
His recipe...Must try red cabbage braised with apple, bacon and balsamic vinegar.

I am allergic to pork, so I used turkey bacon. Recipe calls for butter, I used a dairy free alternative.

Ingredients
- olive oil
- 1/2 lb of turkey bacon
- 1 tablespoon of dill seeds (his recipe calls for fennel but we didn`t have any).
- 2 apples
- 1/2 purple cabbage
- salt, pepper to season
- 1/2 cup balsamic vinegar
- a dollop of dairy free butter
- parsley to garnish

Chop all ingredients. Add to sauce pan olive oil, bacon and dill seeds. When golden add cabbage, apple, salt & pepper, and vinegar. Stir all together. Cook on low heat for an hour. Serve with a dollop of butter and dried parsley.

The recipe calls for one onion but I don`t usually cook with onions. I adjusted the measurements based on my family`s taste. This dish is tasty and will please all. Serves 4. Enjoy!
