With this heat, I am not crazy about cooking. I try to keep it as light as possible. Often times I end up eating dips or salsas. I know it’s not healthy but I find it refreshing. Anyway I cannot buy store bought salsa so I make my own.
- 1 tbs of minced Elephant garlic ( I am allergic to regular garlic)
- 1 can (10 oz) of diced tomatoes with jalapenos.
- 1 large avocado
- 2 tbs sour cream
- 2 tbs of grated Parmesan
- 2 tbs of lemon juice
Mash up avocado, put everything into a bowl and stir. I serve this with pita chips as I can’t eat corn chips. The sour cream fights the jalapenos. Add or subtract sour cream pending on your desire level of heat! Enjoy. No picture was included in this post, as the dish never looks very pretty but always tastes delicious!
